This episode is about a man and a tick, and about the route he took to solve the problem — a route more interesting than the problem itself.
He lives in Kentucky and works as a nutritionist.
Which is to say, "what people ought to eat" was already his professional field.
In 2017 he was travelling for work and had a beef sandwich at lunch.
Not long after the meal, red patches and itching appeared on his skin.
He had no explanation at the time, because there was nothing unusual about the sandwich.
The subsequent diagnosis supplied one: the problem was not the food, it was his own immune system.
He had become allergic to red meat.
Red meat here means the muscle tissue of mammals — cattle, sheep and pigs among them.
What is anomalous is the timing: he had been eating it for over thirty years without a single reaction.
How does an adult suddenly develop an allergy to something they have eaten half their life?
The answer is a single tick bite.
The mechanism is worth setting out clearly, because it is quite unusual.
The cells of the great majority of mammals carry a sugar molecule on their surface, known as alpha-gal.
Humans and a few primates lost the enzyme to synthesise it during evolution, so it is absent from our bodies.
The immune system has no tolerance for it; once it identifies it as foreign, it builds a memory.
A tick's saliva carries that sugar when it bites.
Entering the blood directly through the skin, together with the immune-stimulating properties of the saliva itself, prompts the body to produce specific antibodies against it.
From then on, ingesting the meat of any mammal triggers the same allergic cascade.
The condition is called alpha-gal syndrome.
It has several features that set it apart from common food allergies.
First, it is acquired: a single bite installs it on a previously normal immune system.
Second, the reaction is typically delayed, often appearing hours after eating, which makes it very hard for patients to identify the cause themselves.
Third, its exposure surface extends far beyond "no steak".
Gelatin comes from animal connective tissue, so capsule shells, gummies and some tablet coatings are all in scope.
Dairy is a risk for some patients.
There are even reports that particles carried in barbecue smoke can provoke a reaction.
In other words, what a patient has to re-audit covers the plate, the medicine cabinet, and other people's back gardens.
What he can still eat is seafood, poultry and eggs.
Nutritionally that list is entirely adequate; protein sources are not in short supply.
But he has a line that lands honestly: there are only so many ways to cook a chicken.
That sentence is worth pausing on, because it identifies the real difficulty in problems like this.
Nutritional requirements are substitutable. The experience of eating is not so easily substituted.
What he actually lost was not protein — it was a taste, a texture and a way of eating that he had known for over thirty years.
Now his solution.
Ostriches.
The ostrich is the largest living bird; an adult stands taller than an adult human, can run at up to seventy kilometres an hour, and has lost the ability to fly.
The critical fact is its taxonomic position: an ostrich is a bird, not a mammal, and carries no such sugar molecule.
It is therefore safe for patients like him.
And on every other dimension, ostrich meat is remarkably close to beef.
It is red, high in myoglobin and iron, the grain and cut surface of the raw meat are almost impossible to distinguish from beef, and the flavour after cooking is very close.
Describing the first time he ate it, the phrase he used was that it brought back the old days.
The story could reasonably end there, at "he found a substitute".
But he went one step further: he opened an ostrich farm with partners and raises them himself.
Current stock is over four hundred, with a plan to expand to seven hundred next year.
The product is sold commercially, and it is not cheap — ground meat runs over twenty dollars a pound, premium cuts over forty.
The point I want to make is in this last section.
Faced with an irreversible loss, there are two common responses: accept it and scale down, or stay indefinitely with the thing that is gone.
He chose a third: instead of trying to restore what he lost, he redefined what he actually needed — not "beef", but that taste and that texture.
Once the need is described that way, the number of options goes from zero to more than one immediately.
Complete that step, and what remains is only execution.
Two questions to leave you with.
The first is concrete: is there something you are certain you cannot get back, that you nonetheless think about every so often?
The second is bigger: when you say you need a particular thing, do you need the thing itself, or the feeling it gives you?
