Start with why this stuff is expensive.
Maple syrup comes from maple trees.
In early spring, thawing by day and freezing by night, the sap inside the tree begins to move.
You collect the sap, and it is almost water — barely sweet at all.
Then you boil it.
Forty buckets of sap, boiled down, leave one bucket of syrup.
So what is expensive is not the raw material; it is the thirty-nine buckets boiled away.
Canada produces most of the world’s maple syrup, and the overwhelming majority of that comes from Quebec.
There, this is not merely a business. It is a point of pride.
This year, the business had a problem.
Some of the maple syrup on supermarket shelves had been cut — and not cut a little.
The lab result: at least half of it was cane sugar.
Cane sugar is one of the cheapest sugars in the world; maple syrup is one of the most expensive.
Put the first into the second and the colour matches, the thickness matches, and the price stays where it was.
It came from a producer called Steve Bourdeau, selling under several brand names.
But the genuinely interesting part of this is not the man who did it. It is who could detect it and who could not.
Last March, an ordinary person reported it, and Quebec’s agriculture ministry went and checked. Its conclusion: nothing abnormal found.
This year, the investigative programme Enquête went and checked too.
What they did was simple: they bought five cans off a supermarket shelf and sent them to Centre ACER for testing.
Centre ACER is the reference laboratory for this industry — maple syrup is all it does.
The result: all five cans adulterated, every one of them at least half cane sugar.
Five cans, and not a real one among them.
Same goods. The government could not detect it; the laboratory detected all of it.
Why?
This calls for a little science, because it happens to explain the "could not detect it" exactly.
Maple trees and sugar cane run different photosynthetic pathways.
That difference stays in the sugar, and shows up as a difference in the ratio of carbon isotopes.
So in principle, one isotope test and adulteration is obvious at a glance.
The problem is the threshold.
The standard line the industry uses was set decades ago.
By that line, a can with thirty percent cane sugar in it may still be judged "normal".
Which is to say the test itself has a blind spot — and the person committing the fraud was living inside that blind spot.
The later fix was to add an internal reference: use the malic acid already present in the syrup as a control, and the sensitivity goes up.
In one sentence: it is not that you cannot detect it. The ruler was not fine enough.
Bourdeau’s own account is that he did not do the cutting — the raw material came from his suppliers that way.
Here is what has happened over the past few months.
The maple producers’ industry body filed suit to take away his production quota.
A class action reached the court, naming him and his company.
On the third of August, that class action was amended: the supermarkets that sold the syrup were added to it.
Metro, Sobeys, Loblaw, and one local chain.
The stated grounds are blunt: negligence, recklessness, carelessness, or serious indifference.
Translated: you had it on your shelves for years — you should have known.
Those chains have said they intend to contest, and the case still needs the court’s authorisation to proceed.
So as of today, nobody has been found guilty of anything.
But one thing is already settled: an ordinary person noticed first, the government did not detect it, and a television programme sent five cans to a lab.
