On the plane I already planned the order: pandas first, hotpot second. Check in both, and the day is enough.

The plan is clear. The problem is, the panda did not receive this plan.

It's over there. Bigger than I thought, and more indifferent to me than I thought.

It's eating.

Bamboo isn't very useful. It has to keep eating to get full.

When you arrived, it happened to be at work.

I still wait, without thinking, for it to lift its head. Tour photos and short videos all teach me to wait for that moment.

That moment does happen sometimes.

Usually it's changing a piece of bamboo, or changing how it sits.

It is not coming out to greet guests.

So now I have two choices.

Keep waiting for a photo of it looking at me, or admit: I am watching an animal that is eating.

The second is cheaper. It's already doing that.

I thought pandas were a gift Chengdu sends out. A gift should look at the person receiving it.

The base is not a gift shop.

This is where you watch how pandas live on an ordinary day.

Most of the day is eating and sleeping.

That sounds a bit disappointing. And a bit reassuring. At least it isn't performing for us.

Are you still taking the photo?

Yes.

I'll take this one: a panda that doesn't look at visitors.

Later, if someone asks about Chengdu, I can show them eating first, then sleeping.

It's really asleep now. The climax I waited for turned out to be a nap.

For a lot of people, that is the climax.

You finally see it is not a symbol.

It is a living thing that spends its time in its mouth.

Then my first postcard has a different title and content. The title is panda. The content is waiting.

The second one is at the hotpot restaurant. Ready to argue with the color red?

I'm ready. I'm even ready to lose.

Seeing this color, my body goes into contest mode first. As if I have to prove something next.

Prove you can eat it?

Prove I can eat Chengdu. Prove I'm not the kind of person who orders mild and still needs water.

This red oil looks scary. You think what comes next is only spicy, then spicier.

Is there another line?

There is. Eat one bite first. Don't score it. Tell me the order.

The first thing was not spicy.

The first thing was a thin, ringing layer, like bubbles on the lips.

Then my mouth wouldn't listen for a while.

The spicy arrived later.

That's Sichuan pepper. Má first, spicy after. The spicy that comes later is chili.

I always treated má as a stronger version of spicy.

A lot of people do that.

They see a red pot and call every discomfort spicy.

Má is not burning.

It makes your mouth lose feeling first.

A bit like lemon peel, and also not lemon at all.

Sichuan pepper often gives people that illusion.

Citrus, wood, má.

It gives Sichuan food a face that is not just chili.

So the opponent I prepared never showed up as agreed.

I thought I was going to carry the spicy. Instead I got numbed first.

Do you still want the kitchen to add more chili?

No.

If they add more chili, I just go back to that boring contest.

I want to stay in this bite and separate má from spicy.

Pandas are like that too.

The more you force it to look at you, the more it is just a bear that is eating.

Watch it eat, and it becomes today's Chengdu.

I hate this symmetry.

And I like it too.

The two things I most wanted to see both handle me the same way: they are not in a hurry.

I won't tell the group chat I conquered the hotpot.

Then what about the trophies?

Still here.

There's a panda eating in my phone.

There's still Sichuan pepper in my mouth.

I just won't tell them as a victory.

Then how will you tell it?

I'll say Chengdu gave me what I wanted, and it wasn't quite what I imagined.

That little difference is what I remember.

Eat again tomorrow?

Yes.

Tomorrow I'll order the same red.

Not to be braver. To check the order again: má first, spicy after.

Sounds like you're staying in Chengdu a little longer.

At least until this sound in my mouth leaves by itself.

What I want to take today is not “Chengdu can eat spicy,” but two separate words: spicy, and má.

The panda side has a pair too: visitors come to watch, the animal keeps living its day.
